Case Study: Major Producer Boosts Slicing Throughput and Sanitation Performance

Challenge

A major pork producer was looking for a better solution for slicing smoked bone-in pork loin, smoked boneless pork loin, and 1/2" thick ham steaks. Their existing slicers were creating multiple production challenges, including slow throughput, difficult sanitation, and high knife replacement costs. Another critical requirement was reducing bone fragments and bone dust accumulation as much as possible.

Solution

After reviewing the application and production goals, RAM recommended the MHS ICC-28 Industrial Meat Slicer. The machine was selected for its ability to deliver high-volume slicing performance, consistent slice quality, user-friendly operation, and improved cleanability for demanding food processing environments.

To reduce risk for the customer, RAM structured the opportunity as a demo-to-purchase agreement. If the machine performed as needed during the trial, the customer would move forward with the purchase.

Results

Once the speeds and feeds were properly dialed in, the results were impressive. The MHS ICC-28 produced nearly zero waste and delivered virtually all usable slices at a production rate so high that the packaging team struggled to keep up.

RAM demonstrated that a single ICC-28 could outperform more than three of the customer’s previous slicers, creating such a significant boost in throughput that the full rollout was delayed until a new packaging line could be installed and expanded from two sealing lines to nine.

During that transition period, the ICC-28 was moved to a ham steak slicing application, where it was used to slice large ham steaks to 1/2" thickness. Once again, the machine delivered major gains in throughput and ease of use.

Operational Impact

The slicing team appreciated the machine’s simplicity and performance, while sanitation crews saw major improvements in cleanability and the time required to fully sanitize the equipment. With production running more efficiently, fewer employees were needed at the slicing station, allowing labor to be shifted to weighing and packaging. The improved sanitation process also helped reduce overall food safety risk on the line.
